My 2025 brand new PHEV seems to be using the EV battery even though I don’t put it in EV mode. At start of day it’s fully charged but pretty soon it’s draining and then back to zero

Your assumption/expectation/understanding is incorrect. I would advise to read the manual, it is worth it for this somewhat sophisticated machine.
 
I don't know how it works on a 2025 but for a 2019 you will have to use the save button is order for the care to not use the battery.

In normal mode the car will use the battery unless it needs more power and the engine will start to support the electric motors.

It's basically an EV by default and will use the battery. That's the whole point of a PHEV. EV mode doesn't do a lot.
