Question about parking brake

I'm trying to find out if my car's electric parking brake automatically sets when I put it in park. I couldn't find the info in the manual.

No it does not.

To use the Electric Parking Brake on the Oulander PHEV you need to pull up on the Electric Parking Brake Leaver.

Push down on lever to release the Electric Brake.

Mine seems to set when I put it in park if I'm on a slope.

AFAIK, you’ll only find this feature in the newer models with auto hold stuff. What model do you have?
